Jacob was born about 1881-1885 in Bialystok, Russia (now Bialystok, Poland). His name at birth may have been Jankel Gelbord. He was the son of Meyer Gilbert and Pescha "Lena" Zakine.

In 1891, when he was about nine years old, he emigrated from Zabludow, Russia (now Zabludow, Poland) to Philadelphia, Pennsylvania with his parents and four brothers.

He was enumerated twice on the 1900 U.S. Census. Once as Jacob Geldberg in the household of his older brother, Albert (aka Abraham), in Brooklyn, New York and once as Jacob Gilbert in the household of his father in Philadelphia.

Jacob was a leather luggage manufacturer in Philadelphia. He married Bertha Dosick in September 1904 in Philadelphia. They had four children: Rena, Gladys, Arthur, and Edward.
